Lemon bavarois - Bavarois citron

 
Léger, doux et délicatement fruité, cet entremet est idéal pour terminer un repas d'été.
Le citron se fait ressentir dans la mousse, mais tout en gardant une agréable légèreté.
Si vous souhaitez ressentir plus d'acidité du citron, remplacez simplement les 10 grammes d'eau par du citron dans le miroir, faisant au total 60 grammes de jus de citron.
 
Ingrédients:
 
Biscuit:
125 g de biscuits sablés ou digestives biscuits
50 g de beurre fondu
 
Mousse au citron:
54 g de jaunes d'œufs
50 g de sucre
40 de jus de citron + le zeste d'un citron
150 g de crème liquide entière
4 g de gélatine
 
Miroir au citron:
50 g de jus de citron + 10 g d'eau
2 càs de sucre
3\4 de feuille de gélatine (soit 1,5 g)
2 gouttes de colorant alimentaire jaune
 
Préparation:
 
Le biscuit:
1. Réduire les biscuits en miettes. Transférer les miettes dans un bol et ajouter le beurre fondu. Mélanger afin d'obtenir un Ensemble homogène.
2. Presser le mélange contre le fond d'un moule à charnière d'environ 18 cm, ou de petits moules individuels.
Réserver 1 heure environ au réfrigérateur.
 
La mousse au citron:
1. Faire ramollir la gélatine dans de l'eau froide durant 10 minutes.
2. Fouetter les jaunes d'œufs, le sucre et le zeste d'un citron jusqu'à ce que le mélange blanchisse. Ajouter le jus de citron, mélanger et mettre le récipient au bain-marie. Remuer le mélange jusqu'à atteindre 70°, ensuite retirer du feu.
3. Faire fondre la gélatine essorée 10 secondes environ au micro-onde, ensuite l'ajouter au mélange citronné. Fouetter vivement pendant quelques minutes pour que le mélange tiédisse.
4. Monter la crème liquide en chantilly. Pour cela, mettre au préalable la crème, le bol ainsi que les fouets au congélateur pendant 20 minutes.
5. Une fois la crème citronnée froide, y incorporer délicatement la chantilly. La crème ne doit plus être chaude, mais tout en restant souple; si vous la laissez se raffermir, la mousse finale contiendra des grumeaux.
6. Verser la mousse sur la base biscuitée et placer au réfrigérateur pendant au moins 2 heures.
 
Le miroir citron:
1. Faire ramollir la gélatine dans de l'eau froide pendant 10 minutes, ensuite l'essorer.
2. Chauffer une moitié du mélange citron-eau, y diluer la gélatine essorée en mélangeant délicatement.
3. Hors du feu, ajouter le reste du mélange de citron ainsi que le colorant afin d'intensifier la couleur du miroir.
Laisser tiédir, verser une fine couche au-dessus de l'entremet.
Remettre au frais environ deux heures avant de déguster.

Light, sweet and deliciously fruity. If you prefer your mirror glaze more lemony, simply replace the amount of water by its equivalent of Lemon, bringing the total to 60 grams.
 
Ingredients:
 
Base:
125 g digestives biscuits or sablés
50 g melted butter
 
Lemon mousse:
54 g egg yolks
50 g sugar
40 g lemon juice + zest of 1 lemon
150 g double cream
4 g gelatin (2 leaves of 2 g each)
 
Lemon mirror glaze:
50 g lemon juice + 10 g water
2 T sugar
1.5 g of gelatin (3\4 leaf of gelatin)
2 drops of yellow food coloring
 
The base:
1. Crush the biscuits to crumbs in a food processor. Transfer to a bowl and pour over the melted butter. Mix thoroughly until the crumbs are evenly coated.
2. Put the crumbs into an 18 cm springform pan or individual small tins and press into an even layer over the bottom of the tins.
Chill in the fridge for 1 hour.
 
The lemon mousse:
1. Soak the gelatin in a small bowl of cold water for 10 minutes.
2. In another bowl, beat the egg yolks, sugar and lemon zest until light. Mix in the lemon juice, and transfer the bowl over a pan of boiling water (bain-marie). Whisk until the mixture reaches 70°. Remove from the heat and set aside.
3. Squeeze out the gelatin to remove excess water, melt in the microwave for approx. 10 seconds and then add to the lemony mixture. Whisk for a few minutes until cooled.
4. Make a chantilly with the double cream: first put the cream, the bowl and the whisk you will use into the freezer for 20 minutes (or a few hours in the fridge). Beat the cream on high speed until soft peaks form in the mixture.
5. Once the lemony cream is cooled, slowly fold in the chantilly. Your cream should be cooled but still soft, otherwise the final mousse will have lumps.
6. Spoon the mixture onto the biscuit base. Refrigerate for at least 2 hours before serving.
 
The lemon Mirror glaze:
1. Soak the gelatin in a small bowl of cold water for 10 minutes.
2. In a small saucepan bring half of the lemon and water mixture to a simmer. Add the gelatin and stir to dissolve.
3. Remove the pan from the heat. Add the remaining lemony mixture, and the yellow food coloring.
Let it cool. Pour over the mousse and refrigerate until set, about 2 hours.
